Reyna Traverso, chef and entrepreneur since the birth of La Niña Bonita, trained at the Culinary Art School in Tijuana, Mexico, in 2006. She received traditional Mexican cooking classes from chef and gastronomic researcher Silvia Kurczayn. In addition, she continued her training in the discipline of traditional baking with Zajar Campos. She has worked for Mexican cuisine restaurants such as the 100 Años restaurant in Tijuana, as well as for the Café des Artistes, in Puerto Vallarta, Mexico. In Spain she has worked at Relaix & Chateau in San Román de Escalante, Cantabria; at the El Lago restaurant in Marbella and for the El Pimpi in Malaga. She has also collaborated in the gastronomic-training project Taste of the Past, Knowledge of the Future, organized by the Kilómetro Cero Gastronomic Club, with Hermeneus, La Noria and Obra Social de La Caixa.

In six years, Niña Bonita has had it’s ups and downs due to the effects of a cruel and unexpected global pandemic in 2020 (COVID-19); although she has also enjoyed an explosive growth in cruise visitors to Malaga and the inauguration and success of the Soho Theater (2019), promoted by the Malaga actor Antonio Banderas.

“In December 2017 we started with Niña Bonita and it was a time of a lot of work, a lot…” confesses Reyna Traverso. “The first years we learned day by day and we suffered a lot of hazing… Practically, we reinvented ourselves daily. Every day I had to face something new, as a cook and as a businesswoman.

When we began to consolidate, in 2020, due to COVID restrictions, they only allowed us to open and occupy 30% of the available space… This was a hard blow because the room was small and left us practically out of business… The solution was rent a small place in front of us, with a terrace that, due to COVID restrictions, could open up to 70% of its capacity, and, in this way, we could meet the demand of our already regular customers…

Now, in 2023, we have taken a new step and have completed a major renovation of our premises. We have expanded the living room, kitchen and storage area, by keeping the restaurant that was right next to Niña Bonita, since it closed due to the retirement of its owner. This was a unique opportunity…

Niña Bonita offers a traditional interpretation of the main Mexican recipes, slightly adapting to the European palate… softening the extreme flavors of spicy or acidic dishes. Although as Reyna Traverso confesses, if a customer wants a genuinely Mexican sauce, it is always a pleasure to please them.

“We make traditional Mexican cuisine from scratch and without shortcuts… everything is made at Niña Bonita,” the chef comments with pleasure. “We make our own tortillas, tortilla chips, stews, sauces… It is a fresh cuisine, with countless hours of preparation. I have always believed in the responsibility of selecting the freshest and highest quality product for our kitchen. Our days begin with the purchase of the best products.

I am happy arriving at Niña Bonita at 10 in the morning with the best purchase of fresh products, and going home at 11 at night having given everything in the kitchen. It is an indescribable feeling when you love what you do.”
